Is three weeks realistic for a 25-page clinical research capstone?

Between 80-hour surgical rotations and night shifts, I only have about 15 days left before my final draft is due to a notoriously meticulous department head. I already have my dataset analyzed, but I haven't written a single paragraph of the actual manuscript. If I draft for 2 hours every night after rounds, can I realistically finish a publishable-quality paper without missing critical methodology details?
